PEPPERMINT PATTIES


 
1 pkg. softened cream cheese

2 tsp. peppermint extract

9 cups powdered sugar

2 cups chocolate chips

3 tsp. shortening

Mix cream cheese with peppermint extract. Add powdered sugar gradually. Shape into 1-inch balls and place on wax paper. Squash into patties. Cover. Let chill at least 1 hour (I usually put them in the freezer).

Melt chocolate chips with shortening gently. Let cool. Dip patties in chocolate. Place on wax paper and allow patties to harden. Keep refrigerated.

Note: While dipping in chocolate, leave most of patties in refrigerator, only taking a few out at a time.

and you'd think that NINE cups of powdered sugar is too much......
